Intense Lemon Poppyseed Cake

I need to make a correction here, I said no eggs but meant no egg ‘yolks’ have to be used. Please forgive me girls :(

Preheat oven to 350 and prepare bundt cake pan with spray and parchment paper cut to fit the bottom IF you have a flat bottom bundt.

In large bowl :
1 box lemon cake mix (I prefer Betty Crocker)
1 cup flour, unbleached white
1 cup granulated sugar (organic cane crystals work fine)
dash of salt
1 cup sour cream* ( Tofutti sour cream if you want to avoid dairy)
1 cup water
3 whole eggs ( opt. you can use only the whites )
1 tablespoon lemon extract
Zest and juice of 1 fresh lemon
Mix in large bowl for 2 minutes high speed
Pour into parchment/ spray prepared bundt pan.
Bake 350 for 40 minutes or so, until toothpick check comes out clean. If it pulls away from sides of pan you may have baked it to long. :(
Cool 20 minutes, remove to cake plate
Glaze:
In med. bowl
2 cups confectionery sugar
Just enough fresh lemon juice to make a glaze, whisked until smooth
Zest of one lemon
Zest of half of a lime
Pour glaze over cake while still warm
Cool Completely or place in the refrigerator and allow to become cold before slicing

Intense Lemon Poppy Seed Cake. No eggs, no oil or butter. It does have a cup of sour cream in it which can be substituted with Tofutti sour cream. Yummy intense flavor!!!!
